Healthy Caprese Salad
a fresh twist on the traditional caprese dish Caprese is typically made up of fresh tomatoes, basil, buffalo mozzarella and balsamic. My quick caprese salad is a twist on this delicious treat and substitutes fresh, sweet summer peaches instead of tomatoes. The peaches add an unexpected flavor when combined with the fresh mozzarella. It is a real hit in the summer. I love to use fresh food when cooking (my secret to great tasting food is to use fresh any time you can make the substitute). This caprese salad will have your mouth dancing all summer long.
