Quick Pickled Asparagus

Pull together these pickles in minutes and enjoy them throughout the week. Serve asparagus alongside sandwiches, chopped up into salads, or as an interesting garnish for grown-up cocktails. We used them to crown our the Tallegio Grilled Cheese with Chorizo sandwiches pictured here. They are also delicious as a snack, just as they are.

  • 1 Cup White Vinegar
  • 1 Cup Water
  • 2 Tbsp Sugar
  • 2 Tbsp Salt
  • 3 Cloves Garlic, crushed
  • 3 Sprigs of Fresh Thyme
  • Freshly Cracked Black Pepper
  • 1 Bunch Asparagus

  1. In a sauté pan combine the water, vinegar, sugar, salt, crushed garlic, thyme, and fresh cracked pepper. Turn to high heat and cook until the sugar and salt dissolve.
  2. As the liquid boils, prep the asparagus: Cut the woody bottom third off each spear and discard. Cut the remaining asparagus in half and place in a bowl.
  3. Once the liquid is ready, pour it over the asparagus and let sit until the liquid has cooled completely. Enjoy right away.
