Pumpkin Polenta-Stuffed Zucchini

  • ½ Cup Yellow Corn Meal
  • 1 Cup Water
  • 1 Cup Whole Milk
  • ½ Frisch’s Pumpkin Pie, filling only (OR 1 Cup Spiced Pumpkin Puree)
  • 1 Tb Mexican Chili Powder
  • 1 tso Baking Soda
  • 1 tsp Chipotle Powder
  • 1 tsp Cinnamon
  • ½ Cup Dried Cranberries
  • 4 Zucchini
  • Salt + Pepper

  1. Preheat the oven to 400 degrees.
  2. Prep your zucchini: Remove both ends of the zucchini and slice in half lengthwise. Using a spoon, scrape the center out of each zucchini and place on a cookie sheet. Season with salt and pepper, and bake for 10 minutes, or until tender.
  3. Into a small sauce pot, pour the water and a splash of milk; bring to a boil.
  4. In a mixing bowl, whisk together the rest of the milk, corn meal, and baking soda. When the water comes to a boil, pour in the corn meal mixture and whisk until it starts to thicken. Turn off the heat, cover, and allow the corn meal to rest and thicken for 5 minutes.
  5. After 5 minutes stir in the pumpkin, chili powder, chipotle powder, cinnamon, and cranberries. Taste and season to taste with salt and pepper.
  6. Spoon the polenta into the wells of the zucchini halves. Bake the stuffed zucchini for 10 more minutes, or until the polenta creates a crust.
  7. Remove from the oven and serve warm with a drizzle of Bleu Cheese Cream Sauce.
