white chocolate recipe

  1. Melt the white chocolate chips in the top of a double boiler.
  2. Using a small paint brush, paint candy molds with the melted chocolate. **It might take more than one coat of chocolate to ensure the candies will break free from the molds at the end. Make sure the layer of chocolate is thick enough that no light shines through.**
  3. In a nonstick skillet, bring your sugar to high heat. Melt the sugar until it becomes a golden brown caramel liquid.
  4. Once the caramel is made, reduce the heat to medium-low, add the cream, and stir together to a uniform consistency. Next, stir in the pumpkin filling. Turn off the heat and let cool completely.
  5. Pipe the cooled pumpkin caramel into the centers of the set white chocolate shells until they are 3/4 of the way full. Tap the mold on the table to release any air bubbles.
  6. Finally, pipe the rest of the white chocolate over the caramel to seal the bottom of the bon bons. Place in the refrigerator for 1 hour until the bon bons have set. Flip over the mold and tap until the candies come out. Keep refrigerated until ready to to eat.
