There are some things in life that will always be popular. Much like a starched white tailored shirt, bacon will always look good when dressing your plate. The crisp saltiness will bring back memories of waking up at your parents house and being spoiled with the Saturday morning brunch, or it will remind you of your college years when bacon is served in large chaffing dishes where you pick them up with bad plastic tongs. Of course I will probably not be able to wear my bacon band-aids forever and bacon salt might not always grace grocery store shelves, but everyone will always appreciate a good slice of pork belly! Right?

You could say everything tastes better with bacon. Sandwiches become meals when piled high with bacon. Salads look appetizing when sprinkled with crumbled bacon. I have glazed, rubbed, baked, broiled, and fried bacon, but there comes a point when I wondered what else could I do with it? The obvious answer to me was to figure out how to make homemade bacon. Of course you may be asking yourself why in the world would I want to make bacon when there is a whole section devoted to bacon in the grocery store?, but that is the exact reason I needed to learn the bacon-making process.

To make homemade bacon you first marinate, cure, or brine the pork belly. Then you smoke the pork belly, chill, slice, and crisp up for a delicious treat completely homemade. Here are all the details:

  • Yield: 2-3 Pounds Bacon
  • Prep Time: 2 Days
  • Cook Time: 1-1 ½ Hours

  • 1 Large Knob Ginger
  • 1 Small Bunch Green Onions
  • 2 Small Slabs Pork Belly
  • 1 Bottle Oriental Wok Fried Rice Sauce
  • Wood Chips
  • Cake Resting Rack
  • 2 Disposable Roasting Pans

  • Roughly chop the fresh ginger and green onions.
  • Pour the Fried Rice Sauce all over the pork belly, and rub the fresh ginger and green onion on all sides of the pork. Wrap in plastic and store in the refrigerator for two days.

  • After marinating for two days, remove from the plastic and wipe away the chunks of ginger and green onion.
  • Layer disposable roasting pan with wood chip. Cover in water, and let them soak for 15 minutes.
  • Once the wood chips have soaked, drain all the water. Place the roasting pan on top of your stovetop burners.
  • Turn two burners to medium heat. When you see smoke, place your pork belly on the cake resting rack and place that over the wood chips.

  • Place the second disposable roasting pan over the pork belly to catch all the smoke.
  • Reduce the temperature to medium-low, and let the pork smoke for 45 minutes, or until it reached an internal temperature of 155 degrees.

  • When the pork comes to temperature, remove it from the smoker and let cool. Once it has cooled, place in a plastic bag and let chill in the refrigerator.
  • After the pork has chilled completely, remove from the bag, and slice it with a knife to your desired thickness.
  • Finally, fire up the grill, crisp up both sides, and serve. (Congratulations, you have just made homemade bacon!)

    Will this give it the bacon flavor? Without nitrites this is just going to taste like pork.
