Autumn Smoked Shrimp

a great way to start a meal

I enjoy making a different shrimp dish from time to time - and what a versatile item it is.  Over the years, I have crafted up multitudes of recipes for shrimp: citrus flavored shrimp, cheese stuffed shrimp, cranberry shrimp—you name it. I have bought fresh shrimp, frozen shrimp (to make cleaning shrimp easy), big shrimp, cocktail shrimp…  But perhaps what is most appropriate during the cooler months is my Autumn Smoked Shrimp Appetizer. Loaded with crisp, fresh flavors, this dish is sure to be a hit.

all ingredients

  • 1 Pound Raw Shrimp, 15-20 Count
  • 1 Bottle Lemon Juice
  • A Sprinkle of Salt and Pepper
  • 8 Fresh Sage Leaves, torn
  • Hickory Chips
  • 1 Pinch of Cinnamon
  • 2 Deep Aluminum Dishes
  • Wire Cake Racks

recipe instruction

1. Clean and prepare your shrimp (remove shell and black vein). Place in a bowl with enough lemon juice to cover them. Sprinkle with salt and pepper. Tear your fresh sage and mix together.

2. Let marinate 30 minutes. The shrimp will start to turn pink but it’s only because they have started to cook from the acid in the lemon juice.

3. In one of your aluminum baking dishes, cover the bottom with hickory chips and cover with water. (You want to soak the wood chips so they don’t burn.)

4. Once the wood chips have soaked for 15 minutes, drain the water, tear fresh sage, and sprinkle the wood chips with dried cinnamon. Place cake racks on top of the aluminum baking dish (and above the wood chips).

5. Create a single layer of the fresh shrimp, cover with the second aluminum tin (this acts as a lid), place your "smoker" (two aluminum baking dishes) on your stove top and turn the burners to medium heat.

6. Don’t remove the top lid because it will let all the smoke out! Let cook for 5 minutes, and then you can check it. If the shrimp has changed color, are firm, and no longer translucent then they are finished.

7. Serve and enjoy!
