Pesto Pork Tenderloin
a simple and lovely pork recipe
I mean really, this just could not be any easier. It’s a perfect example of why I am such a huge fan of pork—it takes on whatever flavor I send its way and lets it shine.
Enjoy this pesto rubbed pork as the main course of a dinner, and then again the next day for lunch with gooey cheese. If you have more after that, turn it into a hash with potatoes and a fried egg on top for Sunday brunch.
Did you want to serve this Pesto Pork Tenderloin while entertaining? Add this recipe to your entertaining guide - under hosting tips: serve the pork tenderloin on the end of a fork - as seen in the picture. That is one of my favorite entertaining tips. This way, you can keep the costs down (instead of serving the traditional pork tenderloin sandwiches) and give people reason to smile. And, if you happen to have dedicated servers hosting your party, your caterer will love you - just pick up the forks and throw them in the dishwasher at the end of the night. No messy plates and napkins to throw away/wast.
cooking information
- Yield: Main Dish for 4
- Prep Time: 5 minutes
- Cooking Time: 40 minutes
all ingredients
- 1 Pork Tenderloin
- 1/2 Cup Spinach and Garlic Pesto
recipe instruction
1. Preheat your oven to 450 degrees.
2. Rub your pork tenderloin with the pesto and place in a baking dish.
3. Cook for 40 minutes or until the meat reach the temperature of 150 degrees. You’ll know the pork is finished when it is firm to the touch but bounces back. Risk undercooking it and putting it back in the oven for 5 minutes versus over cooking it.
4. Let rest 5 minutes, slice and serve.
cooking tips
- This is amazing with the creamy polenta or garlic mashed potatoes. Add asparagus and it’s a meal worth serving to company.
- Cut up your pork tenderloin for an easy appetizer recipe at a party. Serve on the end of a fork for a fun presentation!
