Cajun Sausage and Onion Bites
a spicy, sweet bite to eat
About the time of year when there is a brisk feel to the air and sweaters are brought out once again, I know that many of us turn to comfort food. Recently I created a party menu around my take on comfort food in the ‘70s. I created these delicious cajun sausage bites that have just enough bite and just enough sweetness to them to become a hit. As with everything, they are super easy to make. Have your own ‘70s theme party and add my Shrimp with Henry Bain Sauce and Tangy Pork to your menu.

all ingredients
- 1 Roll Dinner Crescent Rolls
- 1 Pound Smoked Linguisa Sausage
- 1 Small Yellow Onion
- 3 Tablespoons Honey Mustard, drizzled on top
- 2 Tablespoons Olive Oil
recipe instruction
1. Pre-heat the oven to 375 degrees.
2. Cut off the top of the onion (not the side with the root). Place the flat side downward and cut onion in half. Remove top two layers (this holds most of the dirt). Place large flat side downward and cut onion into rainbow shapes (this will happen naturally).
3. Add olive oil to a saute pan that is set to medium-high heat. Add onions and saute for 10-20 minutes, or until they are soft.
4. Cut smoked sausage into 1/2 inch rounds.
5. To assemble, open your crescent rolls and place so that the tip of the triangle is at the top, the longer side facing toward you. Add sausage pieces and a forkful of onions, and roll up to the point of the triangle.
6. Place on a baking sheet and cook for 12 minutes, or until the crescent rolls are golden brown. Once cooked, drizzle with honey mustard and serve.
cooking tips
- If you can't find linguisa (found among the pre-packaged specialty sausages), can substitute with Kielbasa.
- You known when the sausage is smoked as it is already cooked through. You want to buy a sausage that is already cooked.
