Mushroom Pizza

a fast dinner or a crowd pleasing appetizer

Pizza is a “go to” meal in my house. Because it is so easy to make, easy to store and there are endless toppings from which to choose, we sometimes get “pizza-ed out”. But this mushroom pizza is loaded with flavor – mostly thanks to the types of mushrooms that are on it – portobella, cremini and shiitake. They are quite hearty mushrooms.

I recommend calling your local pizza parlor and asking if you can buy their dough from them. I have found that this promises to be a great start to a terrific pizza. Or, some of the grocery stores (like Trader Joes) carry uncooked dough. If nothing else, there is always Boboli pizza crusts found in most grocery stores.

  • Cooking Time: 10 minutes

all ingredients

  • 1 Premade Large Pizza Dough
  • 2 1/2 Cups Chopped mushrooms - portobella, shiitake, cremini (equal parts)
  • 1 1/2 Cups Shredded Mozzarella Cheese
  • 1/4 Cup Fresh Goat Cheese
  • 2 Sprigs Fresh Thyme
  • 3 Tbsp Olive Oil
  • 1 Tbsp Minced Garlic

recipe instruction

1. Preheat oven to 450 degrees.

2. Rub the pizza dough with the garlic and olive oil.

3. Cover the pizza dough with the chopped mushrooms, leaving 1 inch around the edge for a crust.

4. Sprinkle with the mozzarella cheese.

5. Pinch little nuggets of goat cheese and place all over the pizza.

6. Bake in the oven for 8-10 minutes.

7. Once the pizza is cooked and the cheese is melted, pull out of the oven and let rest 3 minutes. During this time, pull the leaves of thyme off of the sprig and sprinkle over the pizza.

8. Cut and enjoy!

cooking tips

  • Always keep premade pizza doughs in your refrigerators! It is a great way to use your left overs and a quick dinner for 2!
  • If you are not interested in buying fresh thyme, dust the pizzas lightly with rubbed dried thyme.
