Mushroom Couscous
a deliciously easy meal
I really enjoy making couscous as I inevitably have leftovers, and oh how easy that makes life! Try substituting rice or potatoes with couscous. It is really quite a versatile dish – be sure to see my citrus couscous recipe as well. I would serve this with Whole Roasted Chicken and a green salad for a delicious meal.

all ingredients
- 3 Cups Beef Broth
- 1/2 Cup Dried Porcini Mushrooms
- 1 Teaspoon Dried Basil
- 2 Cups Couscous
recipe instruction
1. Bring the beef broth to a boil. Add your dried porcini mushrooms and dried basil to the broth while it is coming to a boil so the flavors can steep in the boiling broth.
2. Once broth is boiling, add the couscous. Cover and turn off heat.
3. Let sit 5-7 minutes. Fluff with a fork before serving.

- If you cannot find couscous, you can always substitute acini de pepe. If you do so, please be sure to follow the cooking instructions.
