Mint and Green Pea Hummus
a play on a fresh hummus recipe
Although not made from chickpeas – as most hummus is – this green pea hummus brings a lot to the party. Not only does it dress up any plate, but the fresh mint flavor is an added surprise.
For easy entertaining, I like to serve this with Fresh Tomato and Basil Bruschetta as well as the Smoked Turkey Appetizer.

all ingredients
- 2 Cans Green Peas, drained
- 1/4 Cup Fresh Mint
- 1 1/2 Teaspoons Kosher Salt
- 1 Lemon - need juice from 1/2
- 1 Baguette
recipe instruction
1. Slice the baguette on the bias (cut at a 45 degree angle) and place on a cookie sheet. Place under the broiler for 1-2 minutes each side.
2. Place remaining ingredients in a food processor and pulse.
3. To assemble: smear each piece of bread (now a classic crostini as it has been toasted) with some of the hummus mixture.
4. Plate and serve!
