Vegetarian Focaccia Sandwiches

This recipe is one for the gourmet food magazines. This is a quick sandwich right for any sandwich menu. And, not only that, these Vegetarian Focaccia Sandwiches not only look like you spent hours slaving in the kitchen, and they are packed with flavor. If you ask me, the bread really makes this sandwich take on a different look and really adds a lot of punch. And while some may consider this to be a health food item (I do), it certainly can be passed off as gourmet food. This is a great prepared meal delivered right to a friend or family’s doorstep. All they have to do is pop it in the oven to warm it up! Or, if you are serving the sandwich yourself when entertaining, I will pair these focaccia sandwiches with a more traditional turkey and cheese sandwich, some hummus and fresh veggies, and fresh baked cookies (try my Elephant Ears cookie recipe) . An instant (and easy) hit.

all ingredients
- 1 Loaf Focaccia Bread
- 1 Small Eggplant
- 1 Zucchini
- 1 Squash
- 1/4 Roasted Red Pepper Hummus
- 5 Slices Fresh Mozzarella
- 2 Tablespoons Olive Oil
recipe instruction
1. Before you start please wash all of the vegetables. Cut tops and bottoms off of the eggplant, squash, and zucchini. Slice lengthwise approximately ΒΌ of an inch thick.
2. In a pan, heat about 2 tablespoons of olive oil. Once the pan is hot, assemble a layer of vegetables. Once the veggies start to soften or get a brown crust flip and repeat for the next side. Continue to do this for all of the vegetables.
3. Slice the focaccia in half length wise. Smear the bottom half with the red pepper hummus, layer the vegetables, and place the fresh mozzarella on top. Place the top of the focaccia on top and wrap the entire sandwich in aluminum foil.
4. Bake the sandwich at 350 degrees for about 15-20 minutes, or until the cheese melts.

- This actually feeds 2 ravenous people, or 4 hungry people.
- You can buy fresh mozzarella from just about any grocery.
- You can buy this hummus or make your own - follow my online cooking class for hummus and add roasted red peppers (you can buy the peppers already roasted - they are in a jar).
