Fried Egg Tostadas
a nice breakfast alternative
Sick of bacon and eggs? This fried egg tostada is a great way to swich things up in the morning. I like to serve this for brunch as it always gets a positive response as a break from the norm.
This can also be a great evening dish. I would pair it with Fish Tacos, and Tortilla Chips and Salsa.
Note: The photo shows the tostada with the Mexican Grilled Corn.

all ingredients
- 24 Small Flour Tortillas
- 12 Eggs
- 1 Large Can Refried beans
- 1 Head Iceburg lettuce
- 12 Links Sausage - I prefer Andouille but any breakfast sausage will do
- 1 Can Salsa Verde
recipe instruction
1. Clean and finely shred the iceberg lettuce
2. Pull the sausage from its casing and cook on medium to high heat in a large non-stick skillet. Break up the sausage as you are cooking. Be sure to stir so that the sausage will not burn.
3. Fry all 12 eggs (over easy).
4. To assemble: place one tortilla on a plate, then a handful (between 1/4 and 1/2 cup) of the shredded iceberg. Cover with crumbled sausage. Top with another tortilla that has been smeared with refried beans and fried egg. Drizzle with salsa verde.
cooking tips
- You really can use any size tortilla that you want! There are so many kinds to choose from - if something looks good to you - go for it!
