Cuban Sandwich

a great twist to the classic ham sandwich

Looking for a new sandwich to make – something that is tasty yet oh-so-easy? Try my version of a Cuban sandwich. My “secret” is in the zesty rub used on the pork tenderloin. It gives the pork a nice flavor, without overpowering the sandwich.

I recommend that you serve this up at parties – just cut the Cuban sandwiches into smaller bites and serve as an appetizer. If you have vegetarian guests you could also serve my Vegetarian Focaccia Sandwich. Or, if you are looking for a new sandwich to serve up for a family dinner, this will surely become a crowd pleaser – it is in my house.

  • Cooking Time: 60 minutes

all ingredients

  • 1.5 Pounds Pork Tenderloin
  • 1 Rind of 1 Orange, Lemon, and Lime
  • 5 Sandwich Thin Pickles
  • 1/4 Cup Grey Poupon Mustard
  • 1 tsp Dried Oregano
  • 1 tsp Kosher Salt
  • 1/2 tsp Cracked Black Pepper
  • 1 Baguette
  • 1/2 lb Sliced Ham
  • 6 Slices Swiss Cheese

1. Preheat the oven to 350 degrees.

2. In a small bowl combine the zest of 1 lemon, lime, and orange with the juice of the orange, the dried oregano, salt and pepper.

3. Rub the pork tenderloin with the concoction before placing it in a baking dish. Bake for 30-40 minutes.

**You want the pork to be firm in texture but have a little bounce to it. The juices should run clear.

4. To assemble the sandwich, cut the baguette lengthwise, smear with mustard, shingle with sliced pork tenderloin, ham, pickles, and finished with swiss cheese.

5. A true Cuban sandwich is finished by being grilled. If you are interested, just slice the sandwich and press under your George Foreman Grill. I prefer mine without the grill – you can’t go wrong either way.

6. Serve and enjoy!

cooking tips

  • When trying to get the rind of the fruit, I love using my microplane. However, if you don't have one you can always use the smaller side of your cheese grater. Just make sure not to press too hard so you don't get the white layer.
  • If you discover you love the pork tenderloin by itself, cut it up and serve it with some fresh mint cous cous and an orange salad. Yum!
  • These make for great appetizers as well. Just cut the sandwiches into smaller portions and serve!
