Citrus Couscous
a fresh, healthy side
My citrus couscous is another great side dish. The zest of the citrus fruits give this couscous some real zing. Pair this with a fresh green salad and Gazpacho for a simple healthy meal. Be sure to try my Mushroom Couscous for another great side dish.

all ingredients
- 3 Cups Chicken Stock
- 1 Orange Zest
- 1 Lemon Zest
- 1 Lime Zest
- 1 Teaspoon Dried Oregano
- 2 Cups Couscous
recpe instruction
1. Bring the chicken stock to a boil. Add the couscous, zest of the orange, lemon and lime, and oregano.
2. Cover, turn of the heat, and let sit for 5-7 minutes.
3. Fluff with a fork and serve!
