Roasted Chicken with Apple Butter
delicious and easy - make enough for leftovers!
My Whole Roasted Chicken recipe was such a hit – and the online cooking class was heavily watched on YouTube as well – so we decided to add a twist to the dish – add Apple Butter to the recipe! Cooking roasted chicken seems quite difficult to most people. I am here to tell you that it is not. To me, it is one of the easiest, and most economical of family meals - a really easy chicken recipe.
This makes for a delicious Fall entree with Garlic Mashed Potatoes and Crunchy Green Beans on the side.

cooking tips
- You want to be sure that you do not dry out the oven roasted chicken by over-cooking; but it should not be pink either. A good way to tell when the chicken is finished is when the juices run clear.
- You can use any herbs you like. These are just a few of my favorites.
- Cut the chicken into pieces as shown in photo. Serve as an appetizer!
