Parmesan Shortbread with Rare Roast Beef

The Parmesan shortbread just got even better. Dress it up with the rich taste of roast beef, combined with the deep flavor of Gorgonzola cheese and woody rosemary herbs. This is an easy way to add variety to your gathering.
I like to serve this with the Parmesan shortbread with mozzarella and roasted tomato, Cream of Mushroom Soup and Smoked Turkey Appetizer.

- 1.5 Pounds Rare Roase Beef, thinly sliced
- 1/4 Pound Gorgonzola Cheese
- 1 Sprig Rosemary, broken into small pieces for garnish
