My family just loves Italian food. In fact, when I was young, it was one of the few things that I would actually eat. Being raised in an Italian family, food was always a big part of our lives. And, antipasto was something that could work itself into just about any meal, at any time of year. Because of it, I created Antipasto Bites. You get all of the yummy ingredients that are a part of a traditional Antipasto – salami, mozzarella, tomatoes, olive – all wrapped up into one bite.

You can serve this recipe with easy Bride Soup or a Fresh Tomato Pizza.

all ingredients

  • 12 Thick Slices Genoa salami
  • 1 Head Iceberg lettuce, or one bag of pre-shredded lettuce
  • 1 1/2 Cups Italian Dressing
  • 2 Cup Shredded Mozzarella cheese
  • 2 Large Tomatoes
  • 1 Cup Chopped Olives
  • 1/2 Cup Shredded Carrots

1. In a bowl, chop and seed the tomatoes, chop the olives and add the shredded carrots.

2. Add a half cup of Italian dressing to the mixture and let marinate while assembling the rest of the recipe.

3. Clean and cut the head of lettuce into shreds.

4. Toss the salad with remaining dressing.

5. To create your bite, on a plate place one slice of Genoa salami down as your base. Add a small handful of lettuce, a tablespoon of cheese, and then a bit of the tomato salad mixture to the top. Enjoy.
