Dill Vinaigrette

Make this your go-to vinaigrette recipe. In the summer toss it with freshly diced avocados for the ultimate garnish or relish or dip (check out how we used it as a topper for Chipotle Chicken Quiche). The color is brilliant, plus the acid from the lime juices keeps the avocados from oxidizing. Play with dried dill and other herbs the rest of the year. Fresh mint, green onion, chives, and fresh basil are just a few of the flavors that would work with this recipe. Dress a bowl of simple greens for some super fresh crunch.

vinaigrette ingredients

  • ¼ Cup Lime Juice
  • ¼ Cup Orange Juice
  • 1 Tablespoon Dijon Mustard
  • 3 Tablespoons Fresh Dill
  • ½ Cup Olive Oil
  • Salt & Pepper

vinaigrette directions

  1. In a food processor combine the lime juice, orange juice, mustard, fresh dill, salt and pepper; blend together.
  2. As the processor spins, slowly pour the olive oil through the spout.
  3. Store in an air-tight container in your refrigerator.
