Recipe for Turkey Tenderloin
Consider turning this roasted turkey tenderloin recipe into an appetizer by layering slices of it on top a small cake of Aunt Patty’s Stuffing, topping it with gravy, and finishing each piece with a slice of fresh cranberry. As you can see in the picture here, we served the tenderloins this very way and billed it as “Thanksgiving supper in a bite.” Nearly every step may be done in advance, then, except for the ultimate assembly, and it’s such a wonderful surprise for guests.

- 2 Turkey Tenderloins
- 1 Cup Apple Cider
- 6 Fresh Sage Leaves
- Salt/Pepper

- Preheat your oven to 400 degrees.
- Season the turkey tenderloins with salt and pepper on all sides and place in a roasting pan.
- Pour your apple cider into the bottom of the dish with freshly torn sage leaves.
- Place the turkey tenderloins in the oven and let cook 30-40 minutes or until the center of the turkey reaches the temperature of 160 degrees.
- When the turkey is finished cooking, remove from the oven and let rest 5 minutes.
- Slice and serve!

- You can find turkey tenderloins pretty easily in the refrigerated poultry portion of your grocery store. They have pre-marinated tenderloins, but I prefer the unflavored turkey so I can not only control the sodium content, but also flavor.
- Turkey is to be cooked to 165 degrees, but I remove it 5 degrees earlier and let carry-over cooking finish off the bird; this way it doesn’t become too dry. If you do over-cook the turkey, slice it and let is soak in the cider at the bottom of the pan.
