  • 1 Box Refrigerated Pre-made Pie Dough
  • 4 Eggs
  • 1/2 Cup Whole Milk
  • 1 Serrano Chile, sliced in half lengthwise
  • 3 Fresh Sage Leaves
  • 1 Cup Finely-Diced Butternut Squash
  • 1 Tablespoon Butter
  • Fresh Ginger
  • Salt/Pepper

  1. Preheat your oven according to the directions on the pie dough.
  2. Using a small muffin tin, cut circles out of the pie dough and press into the tins. Each pie dough should yield between 10 and 12 circles, depending on the size of the cookie cutter you are using.
  3. When the oven is preheated and your mini pie doughs are ready, place them in the oven and let cook 5-10 minutes until the bottom of the dough is cooked through. Remove and let cool once they are finished.
  4. To a saute pan, add your butter, sage, halved chile, and 1 teaspoon of grated ginger. Turn to medium-high heat.
  5. Once the butter is melted and the aroma perfumes your kitchen, add the butternut squash to the pan. Cook together until the squash is tender. Remove the sage leaves and chile before adding to the quiche.
  6. Add a small spoonful of the squash to the pre-made pie doughs. Make sure to leave room for the egg mixture.
  7. In a small bowl wisk together your eggs and milk. Pour into the individual pies.
  8. Place the filled quiche into the oven and let cook 10 minutes, or until the egg mixture has cooked through.
  9. Remove from the oven and serve warm!

  • To make this recipe easier I like to buy the pre-made pie dough, but if you have a favorite recipe or pie dough already in your refrigerator, I absolutely recommend using that!
  • If you don’t own circular cookie cutters, you can always substitute a baby bottle or a shot glass to make the circles of dough.
  • To prepare this in advance of a gathering you can always make the squash mixture a day in advance, as well as bake the pie doughs a day in advance; assemble and bake the quiche just before service.
