Easy Apple Dessert — Harvest Apples
This simple apple dessert is a quick fix for the apple pie you crave. Fill a crust with it for a kicky version of the classic, or just keep it in the fridge for a fabulous topping to Greek yogurt, hot oatmeal, or cold cinnamon gelato. We served it warm inside a Cinnamon-Almond Pizzelle trumpet.

- 6 Apples
- 2 Tablespoons Unsalted Butter
- 2 Tablespoons Brown Sugar
- 1/2 Cup Brandy
- 1 teaspoon Cinnamon
- 1/2 teaspoon Cardamom
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Nutmeg
- Cayenne to taste

- Prep your apples: remove the sides from the core and cut into bite-size pieces.
- To a large saute pan add your butter and turn to high heat. When the butter is melted, add your apples and brown sugar.
- When the apples are caramelized and tender, add the brandy and let it reduce. **Be careful: the alcohol might cause the concoction to flambe: when the alcohol is completely cooked out (1-2 minutes) the flame will go away.**
- When the flame has died down add your spices.
- Taste the apples and adjust the seasonings accordingly — more cayenne if you want more heat, salt if it is too sweet.
- When the apples are perfect, remove from the stove and let cool. Serve over ice cream, in between oatmeal cookies, or even use for the filling of your apple pies.

- If you don’t have all of those spices on your rack, just buy some Chinese Five Spice to cover all the flavor. Conversely, you can omit any of the individual spices you don’t care for, or don’t already have in your pantry.
- Cayenne adds heat to dishes. I like to add it to sweet dishes for an element of surprise. I recommend adding it to this easy apple dessert because it adds something special – add just a little at a time. You want to experience the kick without having it overwhelm every bite.
