Lime Braised Chicken

- 6 Bone in, Skin On Chicken Breast
- 1 Large Onion
- 6 Limes
- 1 Head of Garlic
- 3 Jalapenos
- 4 Dried Bay Leaves
- 1 Tb Whole Peppercorns
- Salt
- Water

- Prepare your ingredients. Roughly chop your onion, slice the head of garlic in half widthwise, cut each lime into quarters, and slice jalapenos in half.
- Place the prepared in ingredients and chicken breast into a large sauce pot. Add salt, peppercorns, and bay leaves also.
- Fill the pot with enough water to cover the chicken.
- Place the pot on the stove and turn to medium heat. Let cook for 20 minutes.
- Turn off the heat and rotate the chickens around in the pot for even cooking. Turn back on the heat to medium heat and continue cooking for 20 minutes.
- After the chicken is finished cooking turn off the heat and let cool.
- Once the chicken is cooled, remove the chicken from the pot. Remove from the bone and skin and shred the meat by hand.
- Drain the broth, keeping the liquid and removing the aromatics. Squeeze the extra lime juice back into the broth.
- Place the shredded chicken back into the broth so it doesn’t dry out.
- Serve hot in a taco, over a black bean burger or with scrambled eggs.
cooking tips
- This is a great recipe because it’s a lot of flavor with no fat!
- Because this is braised, the chicken can get dried out if over-cooked. It’s important to keep the cooking liquid and the meat together.
- After I cook the chicken and it has cooled I keep it in a Ziploc bag and store in the refrigerator. The chicken will be good for up to a week.
