Gazpacho
a cold soup alternative
I think that gazpacho is quite the refreshing soup option – especially in the summer. It goes well with a simple sandwich as well as something a little fancier and off the grill. Not only that, but it is actually a pretty healthy soup for you as well – gazpacho is made up of all kinds of different fresh veggies.
For a simple sandwich idea try

cooking tips
- Refrigerating the ingredients overnight will help to better lock in the flavor (but I have made it just before serving and it is still quite tasty).
- Don’t worry about chopping your veggies into perfect cubes, we are only doing so to make it easier to blend them together.
