For me, it was like getting sucked into a fascinating round of Double Jeopardy! Just one fact after the other coming right at me, and I never even knew the right questions to ask. When we invited Erin Swing Romanos, The Sensitive Epicure, and Shauna James Ahern, The Gluten-Free Girl, to join us on our weekly food-focused radio lovefest, What’s Hot with Molly, Kelly, and Caitlin, I knew I had a lot to learn about the buzz word “gluten,” but I had no idea about how much I had no idea.
Very generally, gluten is a protein found in wheat, barley, rye, oats, and spelt; specifically, there are all sorts of very particular clarifications. It has become overwhelmingly prevalent in our modern food culture, and it shows up in places you’d least expect it. In and of itself, gluten is not a bad thing…unless it’s a bad thing.
