- 4 Endive
- ΒΌ lb Diced Turkey
- Hummus Vinaigrette

1. Prep your ingredients: dice your turkey, remove the bottoms and quarter lengthwise the endive.
2. To plate, lay the endive on a platter cut side up, spoon dressing over top, and place turkey over top.
3. Serve and enjoy!
cooking tips
- For the turkey I like to buy my favorite turkey deli meat. I ask the deli worker to slice it thickly so I can dice it myself when I get home.
- Endive can oxidize (turn brown) so I wait until right before serving it to cut into quarters.
