Mango Sauce: Warning Have Not Tested
A word of caution – we’ve never made these before. (Although, if you are in any way familiar with the Cooking with Caitlin brand, you will know that we have often never made the recipe before we are out serving it! That’s part of the deal.)
We were recently asked for help with a Mango Sauce recipe. This was on Facebook. In a panic, I (Molly) who could not dream up a Mango Sauce recipe if my life depended on it (well…), chose to hunt down Caitlin to get some good ideas. Now, I am sure that by now our friend on Facebook has already created her sauce, but for the future….here are two different Mango Sauce recipes from which to choose – one savory and one sweet.

Savory Mango Sauce:
- 1 mango
- 1 Shallot or 1/4 cup Finely Minced Green Onion or White Onion
- Fresh Thyme or basil
- Olive Oil
- Salt
*Prepare your ingredients: Finely mince your shallots. Remove the mango from the skin and chop.
*Add a tablespoon of olive oil to a saute pan and add to turn to medium high heat.
*Once your oil is warm enough add your minced shallots and fresh herbs. Saute until tender and aromatic.
*Add your fresh mango to the saute pan and cook until it becomes tender. Turn off the heat and let cool.
*After everything has cooled place in a food processor and blend until smooth. Remove, season to taste.
**Any of your favorite fresh herbs will work. I love working with thyme because it has it’s own lemony flavors and I think it plays well with the fruit. If you are adding this sauce to steak or a gamier piece of meat you could even do rosemary or a more earthy herb. For fish you could use the classic pairing of dill.
**If you want a thicker, creamier sauce you can add 1/4 cup of whole cream or plain Greek yogurt.
Sweet Mango Sauce:
- 1 mango
- 1/2 cup sweet white wine
- 1-2 teaspoons of sugar
- Pinch of salt
- Pinch of cayenne pepper
*Remove the meat of the mango from the skin. Roughly chop.
*Add your mango, wine, and the sugar to a food processor. Blend until smooth.
*Place in a spare bowl. Season lightly with a little salt and a pinch at a time of the cayenne. You want to be able to experience the heat without being over whelmed by it.
*Store in the refrigerator before you serve it.
** You could substitute any fruit juice for white wine.
**You don’t need to add any cayenne if you don’t want but it’s just a fun flavor experience.
