I feel like The Trush Family ate really well this weekend.  I’ve decided that you need to know all about our weekend skip through the kitchen.

For Friday’s dinner I was inspired by some over-ripe, drastically reduced avocados at the grocery.  They had “whip” written all over them, so that’s just what we did.  The girls and I turned them into Avocado Whip to doctor up the rest of dinner.

I put together a buffet of options and everyone stacked their own version of a Fish Taco (the girls call them rolly-pollies and cannot get enough):

Whole Wheat Tortillas

Green and Purple Cabbage

Pan-Fried Salmon, flaked (in lieu of tilapia)

Taco Sour Cream

Monterey Jack

Uncle Nate’s Pico de Gallo

Avocado Whip

Saturday morning I cleaned out the fridge from the week before.  I turned leftover pork chops, crispy potatoes, and a grilled onion into lunch.  Inspired by Caitlin’s Morning-After Hash, I topped each serving with a fried egg and a sprinkle of cheese.  Each of us went straight into dessert (an afternoon nap) with our bellies full.

Sunday we celebrated a two-year and a six-year birthday with a Nutella-stuffed brunch.  I used Caitlin’s recipe for Croque Madame and substituted whipped strawberry cream cheese for the marshmallow fluff she calls for in the instructions.  Oh, and one of the birthday girls requested raisin bread instead of white.

Suffice to say I started the Monday-morning diet today.
