cooking information

  • Yield: 8-10
  • Prep Time: 10 minutes
  • Cooking Time: 10 minutes

all ingredients

  • 1 Baguette
  • 4 Navel Oranges
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Kosher Salt
  • 1/4 Cup Honey
  • 1 Large Log of Goat Cheese
  • Cracked Black Pepper, to taste

recipe instruction

1. Zest 2 navel oranges. Be sure not to apply too much pressure to your navel oranges or you will also get the pith – which is bitter.

2. Peel the orange and break apart the orange segments (the individual pieces). I like to use my knife and work from top to bottom to ensure that I am removing as much of the white pith as I can.

3. In a saute pan, combine the zest of the navel oranges with the orange segments, honey, cayenne and salt. Turn to medium-high heat and stir together until the juice has reduced and the mixture becomes one equal consistency – this will take about 15 minutes. The navel orange will start to piece apart – this is good. Remove from heat.

4. Cut your baguette into 1/2 inch thick slices and place on a baking sheet. In a 400 degree oven, toast your bread for about a minute or two per side. Once this has finished, congratulate yourself – you have just made crostini.

5. Spread the goat cheese on top of the crostini. Top the goat cheese with a spoonful of the orange marmalade you just created, and fresh cracked black pepper.

6. Serve and enjoy!

cooking tips

  • Use a mandarin orange slice to keep this extremely easy!
  • Although goat cheese is considered by many to be a gourmet cheese, it will not break the bank!

The oranges are Navel, like your belly button, not Naval.

    Sorry, this was funny!
