Mint Pesto
the freshest of the fresh
Of all the herbs in the window box, fresh mint just may be my favorite. Whether it’s a dainty Greek Grilled Cheese Sandwichor a hearty leg of lamb, mint takes the fresh factor to a whole new level.
Mint is used everywhere in the summer, but do not be afraid to use it year round.

all ingredients
- 2 Cups Fresh Mint
- 1/4 Cup Walnuts
- 1 Clove Garlic
- 1 Teaspoon Dried Oregano
- 1/2 Cup Olive Oil, approximately
- Salt, to taste
recipe instruction
1. Prepare your ingredients. Pick the mint off of the stem, smash garlic.
2. In your food processor, combine all of the ingredients except the olive oil.
3. Slowly add the olive oil through the spout of the food processor while it is turned on. Stop adding oil once the concoction is completely combined and splashing along the sides. Season with salt to taste.
cooking tips
- Mint pesto can be made up to a week in advance and will keep in your refrigerator in an air tight container for 2 weeks.
- This is great on a grilled cheese with brie and fresh berries, or marinating with your favorite cut of lamb.
