Roasted Chicken with Apple Butter
delicious and easy – make enough for leftovers!
My Whole Roasted Chicken recipe was such a hit – and the online cooking class was heavily watched on YouTube as well – so we decided to add a twist to the dish – add Apple Butter to the recipe! Cooking roasted chicken seems quite difficult to most people. I am here to tell you that it is not. To me, it is one of the easiest, and most economical of family meals – a really easy chicken recipe.
This makes for a delicious Fall entree with Garlic Mashed Potatoes and Crunchy Green Beans on the side.

all ingredients
- 2 Sprigs Fresh Thyme
- 2 Sprigs Fresh Rosemary
- 1 Whole Chicken
- 1 Stick of Unsalted Butter
- 1 Cup Apple Cider Vinegar
- 1/2 Cup Apple Butter
- 8-10 Fresh Sage Leaves
- 1 Teaspoon Salt
recipe instructions
Apple Butter
1. Combine apple cider vinegar with apple butter, salt and sage. Stir.
2. Put the liquid on the stove and bring to a boil. Once you can start to smell the flavors, turn down to medium low heat and let simmer.
Roasted Chicken:
1. Chop herbs
2. Combine with softened butter
3. Smear herbed butter all over the entire chicken (reach your fingers underneath the skin and in the cavity – don’t be shy)
4. Bake at 425 degrees for 30-45 minutes
5. Let sit until you can touch/handle it before carving.
To Combine:
1. Apply basting liquid to chicken before placing the bird in the oven.
2. Apply basting liquid to the chicken after removing from the oven.
cooking tips
- You want to be sure that you do not dry out the oven roasted chicken by over-cooking; but it should not be pink either. A good way to tell when the chicken is finished is when the juices run clear.
- You can use any herbs you like. These are just a few of my favorites.
- Cut the chicken into pieces as shown in photo. Serve as an appetizer!
