Thanksgiving Arancini Balls

all ingredients
- 1 Bag Dried Corn Bread Stuffing
- 3 Cups Chicken Stock
- 1 Small Onion
- 3 Ribs Celery
- 2 Tablespoons Olive Oil
- 1 Tablespoon Honey Mustard
- 1 Tablespoon Paprika
- 1 Tablespoon Dried Thyme
- 2 Teaspoons Salt
- 1 1/2 Cups Finely Diced Ham
- 1 Bottle Vegetable Oil

1. Finely mince the onion and celery. Dice your HoneyBaked Ham.
2. In a saute pan, combine the olive oil, celery, and onion. Turn to medium-high heat and cook until the vegetables are tender.
3. In a large bowl combine the onion, celery mixture plus your dried cornbread, chicken stock, paprika, thyme, salt, and honey mustard. Stir until completely combined.
4. Using a smaller ice cream scooper, portion out your stuffing balls on a cookie sheet. You should be able to yield 20 small balls.
5. Holding one ball at a time, create a well into the center of the stuffing. Add 1 hearty tablespoon of the diced ham to the center and fold the stuffing over the top to close the well and create a complete ball.
6. In a large saute pan, add enough vegetable oil so there it is an inch high on the side of the pan. Turn the medium-high heat.
7. Add stuffing balls to the oil using a spoon so as to not burn yourself. Cook for 2 minutes or until they are golden brown. Flip and finish cooking for another 2 minutes. Remove and drain excess oil on paper towels.
8. Serve with BBQ sauce on the bottom of a bowl while they are still hot. Enjoy!
