Morning After (Thanksgiving) Hash
turn leftovers into the breakfast of champions
Do not throw another bit of leftovers away. After the big Turkey Day meal, treat yourself to a breakfast with all the fixins revisited.
Don’t wait for Thanksgiving to make this Morning After Hash. Growing up, we had some version of this every Sunday morning using leftovers from the whole week. My favorite is when the runny yolk soaks the crispy hash below. A Yogurt Parfait is the perfect side for this harty breakfast.

all ingredients
- Leftover Ham, Turkey, or Both
- Leftover Stuffing
- Olive Oil
- Eggs
recipe instruction
1. Cube leftover ham and turkey.
2. Mix with some stuffing.
3. Put into a hot sauté pan with one tablespoon of olive oil. Saute the combination of leftovers until the stuffing is crispy and lightly browned.
4. Portion it out and serve with a fried egg on top of each portion.
helpful hints
- If you don’t have leftover stuffing, chop up leftover baked potatoes, or use mashed potatoes.
