Polenta
italy’s version of grits
I am told that many people do not think of polenta when they are planning a meal. I can’t imagine why. To me, polenta is such an easy dish that is packed with flavor and just takes minutes to make. Whole Roasted Chicken goes great with polenta or add Asparagus for a easy vegetable side dish to your meal.

all ingredients
- 1 Cup Polenta
- 3 Cups Chicken Broth
- 1/2 Cup Shredded Parmesan Cheese
- 1/2 Cup Heavy Whipping Cream
recipe instruction
1. In a medium sized sauce pot, bring 2 cups of the chicken stock to a boil. Leave 1 cup aside for later use.
2. Once the stock is boiling add your polenta, reduce heat to low and whisk together.
3. The polenta will cook quickly and begin to bubble. Once the polenta has absorbed all of the liquid add the rest of your ingredients (cheese, stock, cream) and whisk together until completely combined.
4. Serve immediately!
* If polenta sits around took long it’ll stiffen up and no longer be creamy. If this has happened to you, just add an additional cup of stock and turn to medium high heat until all of the liquid has been absorbed and serve again!
cooking tips
- Polenta can usually be found in international aisle of the grocery store next to the premade gnocchi.
- Left over polenta? Spread out on a greased cookie sheet and let sit for a couple hours. Cut into your favorite shapes, dredge in flour and fry in a shallow pan of hot oil. Delicious!!
