Minted Peas

I created this simple recipe for green peas to complement a St. Patrick’s Day menu. It’s so darn yummy I make it all year round. These peas go get with some Homemade Beer Bread.

all ingredients

  • 2 Cans Green Peas, drained
  • 2 Shallots
  • 3 Tablespoons Unsalted Butter
  • 1/4 Cup Fresh Mint, chopped
  • Salt and Pepper

1. Prepare your ingredients: open and drain your peas, thinly slice your shallots, chop your fresh mint and set aside.

2. Bring a large sauté pan to medium heat. Add your butter and let it begin to melt.

3. Once your butter is melted, add your fresh mint and shallots. Cook the shallots until they are tender and translucent.

4. When your shallots are finally tender and your kitchen smells like mint, toss in your green peas. Fold together. (If you are working with fresh peas let cook for approximately 2 minutes, if you are just using canned peas you just have to cook them until they are all warmed through.)

5. Season to taste with salt and pepper; serve and enjoy.

cooking tips

  • If the season is right and you are capable of buying fresh peas, substitute 4 cups of fresh peas for the 2 cans of peas.
  • Shallots are pretty easy to find now in most grocery stores. They are small red bulbs that look like a cross between garlic and onions. If you can’t find shallots you can always substitute with chopped green onions or even 2 Tb finely chopped white onion.
  • By adding the onion and mint at the same time it’ll perfume the butter and make for an amazing dish.
  • I like to use unsalted butter because then you can control the salt intake on your own.
