Sausage Stuffed Chicken Pita
full of mediterranean flavor
I developed this recipe as a way to use up leftover food from my Greek Burgers. It makes a delicious lunch, but also holds up nice for dinner since it’s warm and hearty. Don’t be afraid to drizzle leftover Tzatziki Sauce or Greek salad dressing on top for extra kick.

- 1 Pound Greek Sausage
- 5 Large Chicken Breast, Boneless and Skinless
- 5 Pitas
- 4 Plum Tomatoes
- 3 Lemons
- Salt and Pepper

1. Preheat your oven to 450 degrees. To prepare your chicken you want to cut a slice horizontally, as deep as you can without slicing the chicken in half. You will be able to fold your chicken open like a book and it will still be connected.
2. Once your chicken is cut correctly, stuff the inside with as much sausage as you can. Fold back over and sprinkle with salt and pepper and place on a cookie sheet. Follow the same steps for the rest of the breasts.
3. When all of the chicken is ready, cut one lemon in half and use the juice of the whole lemon to season the chickens. Cook in the oven for 30 minutes.
4. Slice the pitas into quarters and wrap in tin foil or plastic wrap. Warm before serving in either a 200 degree oven or quickly for 30 seconds in the microwave.
5. Slice the tomatoes, and cut the rind off of the lemons. Slice the lemons into thin pieces.
6. To assemble, slice the chicken into thin slices so you can see the chicken and the sausage. To one piece of pita, add a slice of tomato, then a slice of lemon, and finally shingle 3-4 pieces of chicken on top.
7. Serve and enjoy!
cooking tips
- If you aren’t interested in making the Greek sausage, you can always substitute with pre-made Italian sausage from the store.
- The chicken can be stuffed and even cooked beforehand. Uncooked, the chicken will hold for 1 day, the cooked chicken will keep for 2 days.
- If the thinly slicing the lemon sounds like a lot of work, you can always just cut the lemons in half and use the juice by drizzling it on top of the sandwiches before service.
