Char Cheddar Burgers

my take on a chicago favorite

Looking for a gooey burger that is super easy to make and is quite tasty? This char cheddar burger is the perfect answer. In Chicago, this was one of my favorite late night snacks (or meals), but I have not seen too many char cheddar burger options here in Cincinnati. I missed it and figured I would just create my own version of the best burger to come out of Chicago. This burger goes great with Sriracha Potato Salad.

  • Prep Time: 10 minutes
  • Cooking Time: 17 minutes

all ingredients

  • 5 Pounds Ground beef
  • 1 Tablespoon each Kosher salt and steak seasoning
  • 1/2 Tablespoon Cracked black pepper
  • 1/2 Bottle Beer – any beer will do
  • 1 Tablespoon each of melted butter and flour
  • 3 Cups Heavy Cream
  • 3 Cups Shredded Sharp Cheddar Cheese
  • 4 Oz. Cream cheese
  • 1 Tablespoon Salt
  • 2 Teaspoons Paprika

Burger Instructions:

1. Combine the first four ingredients together and form 4 oz. burger patties

2. Put patties on grill and grill for 10 minutes, flip with slotted spatula and then cook 7 additional minutes

3. Place burger on a bun, spoon generous amounts of cheddar on top of burger and serve

Cheddar Instructions:

1. In a Sauce pot, melt butter

2. Whisk in flour to make a roux

3. Once combined, cook for approximately 2 minutes and then add all milk

4. Whisk together to be sure lumps do not form

5. On medium-high heat, now add sharp cheddar as well as cream cheese

6. Stir, and add salt and paprika

cooking tips

  • I like to heap the cheese on top of the burger. Despite the fact that it is messy, it makes for a great presentation.
  • Resist the urge to press on your burger and flip it multiple times! Doing that will release the juices.
